I'm still on my 2018-2019 Mac mini with 1T SSD and 32G RAM. Running the latest OS on it. No problems. IMO: With Apple machines, you should always keep macOS and iOS/iPadOS up to date ... I've been doing that since 1984, through the gods only know how many different machines, and it's never bitten me.

It's time to upgrade to an M chip, likely early next year. Would like a new iPad Pro 11" as well.

I have read that since it is optimized for the M chips, the latest MacOS
will actually reduce performance on Intel based macs. I haven't seen any
quantification of how much, and if it depends on the machine.

I could easily see how with all of the memory on chip, the newer systems
could gain a lot of performance caching more data in the main memory
rather than in the cache closest to the processor.
