At the moment, the Apple tax on memory and SSD is, if anything, a discount. They locked in prices before the AI boom tripled prices for everyone else. As such, I have pretty much convinced myself that upgrading my system now would be a good financial mistake to make, because once Apple has to renegotiate prices, I won't be able to for quite a few years.
The cheese grater is doing a fine job, for now. 16 cores, 96 GB of RAM, a couple of expansion cards. However, a new studio is probably 4 times faster.
If I do get the studio, I'll need to sell the mac pro.

It has a 2TB apple SSD and a 4TB SSD in a PCIE card, but I may just keep the 4TB m.2 as an external drive for use with my laptop.
