I was less concerned for my LF equipment out in the cold and snow than I am for this 35mm-class equipment.
Guess it depends on the 35mm-class equipment you mean. I've done a
number of shoots in raging thunderstorms with nary a hiccup. Both my K3
and K1 have powered through.

Same here. K7, K5, K3 mostly on the North Sea cost, in storm, rain,
sleet and snow, frost, drifting sand, what have you... Never a prob.
Three days after I got my K7, one of our cats decided to throw up on my
shiny new camera plus lens in the middle of the night. By morning, all
of it had seeped into every nook and cranny and most of it had dried.
What to do? Those were the days when Pentax still had their own customer
service in Hamburg. Gave them a quick call. Could I clean it under
running water? "You don't have much choice, do you? But keep the lens on."
Cat and camera survived without any lasting damage.

Well, there's a whole lot less to go wrong on a large format camera than on a modern setup.
I'm reasonably confident that pretty much every step I took in camera ownership
(Brownie 127 -> Hanimex 35mm -> Spotmatic II -> MX/ME -> PZ-1P -> MZ-S -> K5 -> E-M1X)
came with an improvement in weather sealing. It's easy to find online videos showing
people pouring water on an M1X, and Olympus tout their weather sealing as a feature.
While there may be less to go wtong on an LF camera. They lack the weather protection of tme contemporary DSLRs. My K3 and K1 have been soaked repeatedly with no apparent ill effects. I wouldnt dare dov hat with my Speed Graphic.

My main concern is cold and internal fogging.
So many surfaces, so difficult to maintain.
LF lenses are easily disassembled. Not so with this class of equipment.
Of course there are always ziplock bags.
